Initial tasting of this Cerro Azul Gesha displays refined floral notes with strawberry, cherry, and white wine-like acidity, combined with a smooth, chocolatey texture that defines a high-quality natural. Immediately after roasting, the coffee showed a delicate floral aroma reminiscent of a well-processed washed coffee, while maintaining a smooth, natural texture on the palate. With aging, the strawberry note is expected to intensify, amplifying the coffee’s natural layer and complexity.
Roast profile
This roast profile was designed considering Colombia’s unique terroir and natural processing style. I selected a medium gas pressure level to allow for a light roast drop temperature, with the aim of preserving this coffee’s complex, high-altitude Gesha character.
Cafe Granja La Esperanza (CGLE) is known for cultivating some of the finest Colombian coffees, with this Gesha from Cerro Azul exemplifying their expertise in both terroir and processing. Known for their advanced natural processing techniques, CGLE supplies specialty lots often used in competitions worldwide.
For a future batch, I plan to increase the gas pressure by 1mmAq, as this adjustment is expected to enhance the intensity of flavors and prolong the aftertaste. This incremental adjustment aligns with maximizing the layered complexity that characterizes this exquisite natural Gesha from CGLE’s high-elevation Cerro Azul farm.
