The roast’s initial characteristics show good flavor clarity but require refinement to eliminate slightly roasty and dry notes due to an overly high gas pressure in the first attempt.
Roast profile
The initial profile was set under the assumption that this was a “fully washed” process, resulting in a higher gas pressure of (high). However, after reviewing the detailed process, which involves dry fermentation followed by washing rather than full wet fermentation, it became clear that a medium-high gas setting would better suit this coffee.
For future roasts, adjustments include lowering the gas pressure to 44 mmAq and increasing the charge temperature to 170°C (338°F), with a target drop temperature of 215°C (419°F). This approach will help mitigate any roasty or dry qualities and bring out a cleaner, more delicate expression of the coffee’s natural fruit and floral qualities.
With these adjustments, the roast is expected to achieve a refined profile that reflects the meticulous processing of this Ethiopian coffee, allowing the nuanced fruit and tea-like character to shine through in the cup.
